The mastermind behind the cocktails at Farmer's Table, Vicky Baines, shares one of her favorite cocktails called 'How Do You Like Them Apples' while learning about her journey as a bartender.

What's the story behind the How Do You Like Them Apples?
My co-worker and cocktail collaborator Preston Cobb brought me the mini calvodos apples from Colins & Coupe. I then started mixing together flavors that would pair well with it until I found this mix of ingredients. It’s just enough nitro coffee, sweetness and hint of chocolate all well balanced with layers of flavor as the coffee ice cube starts to melt.
1 Nitro Frozen coffee ice cube (made in-house)
1.5 oz Bourbon old forester
1 oz Evolution cold press apple juice
.05 oz maple syrup
3 dashes chocolate bitters
1 oz nitro coffee (Farmer’s Table uses Cafe Moto)
Garnish with a mini calvados apple (Collins &coupe)
Describe the taste.
Layers of chocolate, apple, coffee, almost like a cake. You definitely experience the taste in layers.

What are some cocktail trends you are noticing in San Diego?
Aperol Spritz and Negroni cocktails are very popular right now. Visit Farmer’s Table Little Italy...I have this a blood orange barrel white aged Negroni on tap!
What's one thing you wish people understood about bartending?
There are countless things to learn that only different environments will teach you.
What's your favorite drink to make behind the bar?
I have a few! Mojito, Old Fashioned, Espresso Martini, Negroni, Aperol Spritz, and my own infusion cocktails.
What's your favorite spirit?
There is no favorite. They all have wild capabilities – I like them all!
What do you do in your spare time when you're not creating cocktails?
Surfing, outrigger canoeing, hiking or paddleboarding with my dog.
What's next for you?
…after 2 restaurants opening within a year...A vacation.
