Behind the Stick with Masu Moghani from PB Shore Club


Miami native Masu Moghani is creating delicious cocktails for the folks kicking it at Pacific Beach Shore Club. On this episode of Behind the Stick, he shows us how to make his refreshing margarita cocktail called Great White Margarita.

What's the story behind the Great White?

The cocktail is a play on a few different cocktails. If you enjoy Margaritas, Palomas or Salty Dogs, then this cocktail is for you. Grapefruit Bite! Gonna Getcha!

Describe the taste.

The Great White is refreshing and crisp. It doesn't sit in the back of your neck – it is balanced without being too sour. The grapefruit ads a bit of tartness and the salt just accents everything, making the drink pop with flavors. A “mustache-friendly cocktail,” as well.

What's the key component of this drink?

Tequila is the key component. I use Avion Blanco because its flavor profile works for this cocktail because it doesn’t have too many extra flavors, which would compromise the taste.

What reactions do you get from customers when they try this cocktail for the first time?

When I present the cocktail people love how fresh it is! The grapefruit adds a nice bite, balancing the sweetness and the overall flavor of the drink. Honestly, I know it's good when a guest sits and orders three more and takes four Instagram pics with me in them.. kind of seals the deal that it's good!

If you had to pair this cocktail with a dish, what would you pair it with?

This drink goes well with a good Mahi ceviche or bacon-wrapped shrimp. Or maybe just a Grilled Mahi Taco? Calamari? The list goes on...

Other than killer margaritas, we have amazing views. Come in for breakfast or enjoy a sunset. We offer our Wing Man Shot special paired with and a cold beer for $10 everyday! Originally From Miami, Florida.

How has your journey been leading up to your role at PB Shore Club?

My roots are nightclubs in South Beach and I've used bartending to travel cross country. I’ve worked in all kinds of bars from fine dining to rad beach bars.

What's your favorite cocktail on the menu?

My favorite cocktail on the menu is the Green Machine – always a crowd pleaser! Nice kick to a margarita and with the tajin rim and Cucumbers. It’s visually attractive and a must have!

Define the perfect cocktail.

The perfect cocktail is simple and balanced.. take a minute to taste your cocktail, don't just suck it down. I've seen a lot of bartenders struggle with 3 part cocktails take a second the guest will notice that you care

What are some cocktail trends you are noticing in San Diego?

I've noticed the cocktails are moving into the kitchen. Guests want us to muddle Jalapenos and melons. We’re asked to top Bloody Mary’s with bacon, chicken wings and burgers hanging off the side. It's a little outta’ control but here we are.. How many burgers do you want on that? 2018 party on!!!

What's your favorite drink to make behind the bar?

I truly enjoy rum cocktails, tiki-style drinks, Mai Tai's and Grogs – you can call them Florida guy problems.

What's your favorite spirit?

My favorite spirit would have to be Tequila. Living in San Diego I'm able to get my hands on so many great bottles and experience the full spectrum. I also find that real hot babes don't always drink Whiskey.

What do you do in your spare time when you're not creating cocktails?

When I'm not working I try to enjoy this city by longboarding down to Mission Beach, riding my bike around Adams Ave. and taking long drives up the coast. Crashing My RC Car at a track in Lakeside is another one of my favorite things!

What's next for you?

I'm going to continue serving up liquid smiles, party like a rock star and retire in Key West partying naked with you!
